The folks over at the Southern Foodways Alliance once said, “If onion, celery, and green bell pepper are the holy trinity of Southern food, corn is the sacred mother.” And we certainly agree. For ages, southerners have been picking and shucking each summer until the crickets chirp and the fireflies glow. There are countless beloved recipes from cornbread to corn fritters to corn grits and loads in between. Personally we like our corn grilled and topped with Winston-Salem’s own Texas Pete, homegrown cilantro, creamy mayo and sprinkled with crumbly cojita cheese. You?
